Ingredients

  • 500 g - lilva (hyacinth beans)
  • 250 g - maida (refined flour)
  • 10 g - cumin
  • 10 g - coriander seeds
  • 30 g - green chillies
  • 5 g - chilli powder
  • 25 g - garam masala
  • 25 g - coriander leaves 3 tbsp - lime juice
  • salt to taste
  • ground nut oil, for frying

How to Make Lilvani Kachori

  • De-pod beans.
  • Hand-crush roughly.
  • Sieve refined flour with half a tsp salt.
  • Add 1 tbsp oil.
  • Knead stiff dough with water.
  • Set aside to ferment for 30 minutes.
  • Mix all herbs and spices in the beans.
  • Toss well.
  • Heat frying oil.
  • Roll out small roundels from flour dough.
  • Take a spoonful of bean mixture
