Ingredients

  • Basmati rice - 2 cup
  • Grated coconut - 3 cup
  • Dry red chilli - 6
  • Urad dal - 2 tsp
  • Channa dal - 2 tsp
  • Coconut oil - 2 tbsp
  • Mustard - 1 tsp
  • Curry leaves - a few
  • Salt to taste.

How to Make Madras Coconut Rice

  • Soak the rice for 10 mins.
  • Cook the rice with salt and 1 tsp oil till its almost done and not overcooked
  • Heat oil in a kadhai and splutter the mustard seeds. Now add the dals, curry leaves and split red chillies and saute until golden brown.
  • Now add the grated coconut and fry until it turns a golden brown.
  • Add rice to it and saute for 5 mins on medium heat.
  • Serve hot.
