Ingredients

  • 15 ml - Oil
  • 1 - large Onion sliced
  • 3 - Garlic crushed
  • 10 ml - ground coriander
  • 1/2 tsp - Chilli powder
  • Ground Cardamom
  • Ground Cloves
  • 1 tbsp - Garam Masala
  • 1 tsp - ground Cumin
  • 1 tbsp - ground Turmeric
  • 2 tbsp - Flour
  • 1 tbsp - Tomato Puree
  • 450 g - Chicken
  • Juice of 1 lemon
  • 5 ml - Sugar
  • 25 g - Sultanas
  • Pinch of Salt
  • 600 ml - Chicken stalk

How to Make Madras Curry

  • Put the oil, onion and garlic in a pan. Cover and cook until onion is soft.
  • Blend in all the spices and flavourings. Heat it for 2 mins on high flame.
  • Stir in the flour and tomato puree. Add all other ingredients including chicken.
  • Blend in the hot stock. Cook for 20 mins on high flame or until meat is tender.
  • Stir occasionally during cooking. Serve with boiled rice.
