Ingredients

  • 50 red chillies (discard stalks)
  • 10 tbsp - coriander seeds
  • 2.5 pieces turmeric
  • 3 tbsp - saunf
  • 4 tbsp - pepper
  • 1/2 cup - chana dal
  • dried curry leaves a handful

How to Make Madras Curry Powder

  • Roast all the ingredients from red chilies to chana dal without oil.
  • Cool and powder with curry leaves.
  • Cool and store in an air tight container.
