Goda Masala is a pungent spice mix used in Maharashtrian cuisine. The main ingredients in goda masala are sesame seeds and coconut flakes. Goda Masala is the base for most Maharashtrian curries and dals.
Ingredients
- 1/4 kg - coriander seeds
- 1 cup - dry coconut
- 200 g - white sesame seeds
- 200 g - black sesame seeds
- 50 g - aniseed
- 50 g - cumin seeds
- 1 tsp - asafoetida
- 1'' piece - cinnamon
- 3 - cloves
- 1 - masala velachi
- 2 - dry red chillies
- 1 tsp - turmeric
- Salt to taste.
How to Make Maharashtrian Goda (Black) Masala
- Roast all the ingredients except coconut and coriander seeds with a little amount of oil.
- Roast coconut and coriander seeds separately without oil.
- Now grind all these together with a tsp of raw cumin seeds and salt.
- Let it cool and store in an airtight container.
