Ingredients

  • Hokkien noodles - 800 g
  • Cooking Oil - 1 cup
  • Eggs - 4
  • Garlic (diced finely) - 4 cloves
  • Soy sauce - 2 tbsps
  • Red Chilli Paste - 1.5 tbsp
  • Chopped onion - 1
  • Fish balls (diced) - 6
  • Dry Prawns, pounded - 1/2 tbsp
  • Potato (boiled & diced) - 2 cups
  • Blachan (shrimp paste) - 1.5 tsp
  • Choy Sim - Cut to 1 inch lengths
  • Fried Soy Bean Cake x 6 - Diced
  • Tomato sauce - 3-4 tbsps
  • 1 - lime, juiced
  • Green Chilli (diced) - 1

How to Make Mamak Mee (Fried Noodles)

  • Heat 1 tbsp oil in a hot wok (if you don't have one, use a non-stick pan) and stir-fry eggs. Remove and keep aside.
  • Heat the remaining oil and fry in this order - garlic, onions, blachan, chilli paste, dry prawns, fish balls, potatoes, and soya bean cake.
  • Add Hokkien noodles and fry.
  • Then add choy sim and fry.
  • Finally, add bean sprouts and stir.
  • Drizzle tomato sauce and lime juice, add eggs and stir some more. Adjust soy and tomato sauce to taste.
  • Sprinkle cut green chilli on top when serving.
