  • 2 mangoes each approximately 200 gms.
  • 50 gms. castor sugar
  • 125 ml. water
  • Grated rind of 1 lemon
  • 1 inch piece of crystallized stem ginger, finely chopped

How to Make Mango and Ginger Sorbet

  • Puree the mango flesh.
  • Dissolve sugar in water, add lemon rind and bring to boil.
  • Simmer for 4 minutes.Add lemon juice, mango flesh and ginger.
  • Make up to 750 ml. with water, stir and pour into a container. Freeze for 2-3 hours.
  • Stir occasionally throughout to keep the freezing process even.
  • Remove from freezer and place in refrigerator for approximately 1 hour before serving.
  • Decorate with more chopped ginger and serve with exotic fruit salad.
