  • 1.5 cups - Bengal gram, soaked in water for 3 hours
  • 1 bunch dill leaves, finely chopped
  • 1 small bunch coriander leaves, finely chopped
  • 5-6 green chillies, crushed
  • salt as per taste,
  • 2 tbsp - finely chopped onions (or other veggies like carrots as desired).

How to Make Masala Vada Batter

  • Drain dal
  • Reserve 1/4 cup and grind the rest to a batter with minimal or no water.
  • Add all other ingredients, including reserved whole dal
  • The batter for vadas is ready
  • Add 2-3 tbsp hot oil to the mixture.
  • Heat oil, make patties with moist palm.
  • Drop carefully into the hot oil.
  • Fry first one side then the other, till golden brown.
  • Serve hot with green chutney, tamarind chutney or ketchup.
