Ingredients

  • 2 glasses - buttermilk
  • 1 - potato
  • 2 - carrots
  • 1/4 - bottle gourd
  • 2 - tomatoes
  • 1 - brinjal
  • 2-4 - green beans
  • 3 - green chillies
  • 1 - drumstick
  • coriander for garnishing
  • 1 small piece - ginger
  • 1/4 cup - grated coconut
  • 1 - tbsp - besan
  • 1/2 tsp - chana dal
  • 1/2 tsp - moong dal
  • 1/2 tsp - turmeric
  • 1 tsp - red chillies
  • 1/2 tsp - cumin seeds
  • a pinch of asafoetida
  • salt to taste
  • For tempering:
  • methi seeds
  • curry leaves

How to Make Menthi Pulusu

  • Boil all the vegetables and keep them aside.
  • Grind ginger and green chillies and keep them aside.
  • To the sour buttermilk, add besan and churn the above mixture well.
  • Take oil in a vessel, add the seasonings to it and fry for 1 minute.
  • Add the above vegetables and buttermilk mixture to it .
  • Add salt to taste and grated coconut.
  • Allow it to cook for sometime (around 15-20 mins).
  • Heat some oil, splutter the tempering ingredients and pour over dish. Then garnish with coriander leaves.
  • Serve hot with rice and papad.
