Ingredients

  • Cooked rice - 1 cup
  • Rotel chopped tomatoes and green chillies - 1 can
  • Salsa - 2 tbsp
  • Black beans - 1 can (Optional)
  • cumin seeds - 1 tsp
  • Cilantro chopped fine - 1/4 cup
  • Grated Cheese - 1/2 cup
  • Salt to taste

How to Make Mexican Rice Casserole

  • Preheat oven to 350 degrees F. Grease an ovenproof casserole.
  • Mix all the ingredients except cheese and pour into the casserole.
  • Make 2 portions of the grated cheese and add one portion to the casserole.
  • Bake for 15 mins until the casserole is hot and bubbly.
  • Top with the remaining grated cheese and let the cheese melt.
  • Serve hot with some beans, corn chips and salsa on the side.
