  • Round brinjal - 200 g
  • Frozen peas - 100 g
  • Onions - 2
  • Tomato puree - 2 tbsp
  • Salt - 1 tsp
  • Red chilli powder - 1/2 tsp
  • Coriander seeds, semi crushed - 1 tbsp
  • Oil - 1 tbsp

How to Make Microwave Baingan Bhartha

  • Prick the brinjal with a fork and roast it in a microwave for 3 mins.
  • Remove the skin with water and crush it and keep aside.
  • Put oil in the microwave pan and add coriander seeds, onions, salt, chilli powder and tomato puree.
  • Heat it on high temp for five minutes.
  • Then add brinjal and peas. Put it back in the oven for three mins. Serve.
