Ingredients

  • 6 round, tender medium-sized brinjal
  • Salt
  • 1 tbsp - oil
  • 1 tsp - red chilli powder
  • 1/2 tsp - coriander powder
  • 1/2 tsp - ginger garlic paste
  • 1.5 tbsp - corn flour
  • 1 tbsp - coriander leaves, very finely chopped
  • Garam masala, a pinch
  • Turmeric powder, a pinch

How to Make Microwave crispy brinjal

  • Cut brinjals into rounds (1/3 inch to 1/2 inch thickness)
  • Drop them in salted water after cutting.
  • Mix all the ingredients except oil, into a tight paste.
  • Squeeze the brinjal pieces and coat them with masala mix.
  • Keep aside for 15 mins.
  • Arrange the brinjal pieces on a microwave safe plate; sprinkle oil over the pieces, cook under microwave on high for 1.5-2 mins.
  • Turn them and cook on high for another 1.5-2 mins.
  • Check and if necessary cook for another minute and remove.
  • Allow some standing time and then serve as side dish or starter.
