  • 2 tbsp. sunflower oil
  • 200 gms. sliced onion
  • 1 clove garlic, chopped
  • 2 tsp. cumin seeds
  • 1 tsp. ground turmeric
  • 1 tsp. mild chilli powder
  • 400 gms. tomatoes, chopped
  • 1 large potato, cubed
  • 200 gms. cauliflower florets
  • 100 gms. ladies finger, trimmed
  • 2 tbsp. lemon juice

How to Make Microwaved Vegetable Curry

  • Put the oil, onion and garlic in a microwave proof bowl, cover and cook on high for five minutes.
  • Add cumin seeds, turmeric, chilli and chopped tomatoes. Cook for a further five minutes.
  • Stir in the potatoes, cauliflower, okra, lemon juice and seasoning.
  • Cook for 15 minutes. until vegetables are tender.
  • Spoon into serving dishes.
  • Serve with yoghurt and pickles.
