  • 250 g - plain flour
  • 3 tsp - baking powder
  • 3 tsp - castor sugar
  • 2 large eggs
  • 175 ml - milk
  • 75 g - butter (melted)
  • 1/3 cup - mincemeat
  • 12 hole muffin tin
  • grated zest of 1 orange
  • salt to taste

How to Make Mincemeat Muffins

  • Preheat the oven to 200 degree C.
  • Sift the flour and baking powder into a large bowl.
  • Then stir in the sugar and half a teaspoon of salt.
  • In a separate bowl, beat the eggs, zest and milk.
  • Stir the melted butter into the milk mix, then pour this into the flour.
  • Stir with a large metal spoon for a dozen or so strokes, then stop.
  • The mixture will be lumpy and not all the flour stirred in.
  • Spoon half of the cake mixture into the cases.
  • Then add a heaped teaspoon of mincemeat to each.
  • Then cover with the rest of the mixture.
  • Bake for 25-30 minutes or until risen and golden.
  • Leave to settle for a couple of minutes before removing them from the tin.
