Ingredients

  • 2 cups - boiled rice
  • 1 bunch - mint leave ground to a paste
  • 2 - eggs
  • Fresh chopped coriander - 4 sprigs
  • 5 - green tomatoes cut
  • 1 - onion
  • Green chilli paste - 1 tsp
  • Salt to taste
  • Seasoning:
  • Mustard, cumin, black pepper powder, curry leaves and 6 tsp of vegetable oil

How to Make Mint and Egg Fried Rice

  • Heat a pan on medium heat, add oil and splutter mustard seeds. Add cumin, ground pepper, curry leaves and fry them for a minute.
  • Then add chopped onion, chopped tomato and fry for a few mins.
  • Add green chilli paste and mint paste.
  • Crack the eggs into the pan and beat them until they mix well with tomato and onion pieces, fry for 2 mins.
  • Meanwhile, boil the rice in a rice cooker.
  • Mix the boiled rice with the above mixture and fry it for 4-5 mins.
  • Garnish the mint and egg fried rice with chopped coriander and serve hot.
