Ingredients

  • 1/2 kg - baby potatoes
  • 2 tbsp - mint and pumpkin seeds powder
  • 1 tsp - coriander powder
  • 1 tsp - cumin seeds
  • a few curry leaves
  • salt to taste
  • oil as needed

How to Make Minty Baby Potato Roast

  • Cook the baby potatoes separately in water with enough salt until they turn soft. Peel the skin.
  • Heat enough oil and fry the cumin seeds and curry leaves.
  • Add the baby potatoes and saute for a few minutes.
  • Add the mint and pumpkin seeds powder, coriander powder and salt and stir.
  • Sprinkle some water and cook on medium flame until the potatoes get well roasted.
  • Serve hot as a side dish.
