Ingredients

  • 2 cups - cooked basmati rice
  • 1 - onion (chopped)
  • 3 - green chillies (slit)
  • 1/2 tsp - cumin seeds
  • 15 - cashew pieces
  • 1/4 cup - green peas (frozen)
  • 1 tsp - ghee
  • oil as needed
  • salt to taste
  • To grind: 1 cup - mint leaves
  • 1/4 cup - coriander leaves
  • 1 tsp - fennel seeds
  • 10 - peppercorns
  • 1/2 tsp - cumin seeds
  • 1 - cinnamon stick
  • 3 - cloves
  • 2 tbsp - grated coconut

How to Make Minty Cashew N Peas Pulao

  • Mix the ingredients listed for grinding. Add enough water, grind to a fine paste and keep aside.
  • Heat oil in a large sauce pan and add the cumin seeds.
  • When the seeds crackle, add the cashew pieces and fry till golden brown.
  • Add the chopped onion and green chillies and saute until the onions are translucent.
  • Add the green peas, salt and grounded paste and cook on simmer until the oil separates.
  • Add the cooked rice and toss gently until everything is mixed well.
  • Drizzle some ghee.
  • Serve hot with any side dish.
