  • 500 ml - milk, preferably full cream
  • 50 g - brown sugar or to taste
  • 1.5 tbsp - curds

How to Make Mishti Doi

  • Bring milk to boil. Pour into a microwave-safe dish. Microwave at 100% power for 10 mins, stirring twice.
  • If your dish is not deep enough and the milk spills over, you could consider cooking at a lower power level for a few extra minutes.
  • Add the sugar, you may use plain sugar but it will not give you the characteristic beige colour of this dish.
  • Microwave at the same power level for 1 minute more. Stand 10 mins or till the milk is lukewarm.
  • In a bowl, smear the curds. Pour in the milk stirring constantly. Leave to set.
  • Serve chilled.
