Ingredients

  • 2 cups - potatoes (cooked and cubed)
  • 2 - onions (finely chopped)
  • 1/2 cup - spinach (chopped)
  • 1/4 cup - drumstick leaves (frozen)
  • 1/4 cup - methi leaves (frozen)
  • 1 tsp - red chilli powder
  • 3 - garlic cloves (crushed)
  • 1 tsp - fennel seeds
  • salt to taste
  • oil as needed

How to Make Mixed Greens Potato Roast

  • Heat oil and fry the fennel seeds.
  • Add the chopped onions, salt and crushed garlic cloves. Saute for a few minutes until the onions are translucent.
  • Add the potatoes and red chilli powder and cook for a few seconds.
  • Add the spinach, drumstick leaves and methi leaves to the potatoes.
  • Cook on simmering flame for a few minutes until the oil separates.
  • Serve hot with rice or roti.
