Ingredients

  • 2 - medium-sized radish, cut into 1 inch cubes
  • 250 g - pumpkin, cut into 1 inch cubes
  • 7 to 8 - small brinjals, cut into 1 inch cubes
  • 2 cups - chopped spinach
  • 10 to 12 - small prawns
  • 2 - green chillies, slit lengthwise
  • 1 - medium-sized onion, finely chopped
  • 1 tbsp - panch phoron
  • 1 tsp - turmeric powder
  • 1 tbsp - coriander powder
  • Salt, as required
  • Oil, as required

How to Make Mixed Veg with Prawns

  • Marinate the prawns with a pinch of salt and turmeric for some time and pan fry it.
  • In a skillet, splutter panch phoron, chopped onions, green chillies and turmeric.
  • Add prawns and fry with the spices.
  • Add radish and cook for a minute.
  • Add pumpkin and brinjal consecutively and cook until half-done.
  • Lastly, add salt , coriander powder and spinach leaves and mix well.
  • Serve hot with rice and dal.
