  • 1/2 packet - Angel Hair pasta
  • 1 - big onion (sliced)
  • 3 - green chillies (slit)
  • 1/2 cup - carrot (chopped)
  • 1 cup - cabbage (shredded)
  • 1/2 cup - green peas (frozen)
  • 1/4 tsp - turmeric powder
  • 1 tsp - mustard seeds + urad dal
  • 1 tsp - channa dal
  • 1/4 tsp - hing powder
  • a few curry leaves
  • 1/2 tsp - ginger (grated)
  • oil as needed
  • salt to taste

How to Make Mixed Vegetable and Angel Hair Pasta Upma

  • Cook the pasta as per the package instructions.
  • Heat oil and add the mustard seeds. When the seeds splutter, add urad dal, hing, curry leaves and grated ginger and fry for a few minutes.
  • Add the onions and green chillies and cook until the onions are translucent.
  • Add the carrots, green peas and turmeric powder and cook for a few minutes. Now add the cabbage and salt and cook again until the vegetables shrink a bit.
  • Close the lid and cook on simmer until the vegetables gets well cooked.
  • Add the pasta and toss everything gently until everything mixes well.
  • Serve hot with coconut chutney.
