Ingredients

  • Potato - 2
  • Green peas - handful
  • Carrot - 2
  • Beet root (small) - 1
  • Onion (big) - 1
  • Green chillies - 4
  • Coconut milk -
  • Curry leaves - 5-10 leaves
  • Garam masala - 1 tsp
  • Oil - 2 tsp
  • Mustard seeds - 1 tsp
  • Cumin seeds - 1 tsp
  • Salt - as per taste

How to Make Mixed Vegetable Curry under 30 mins

  • Cut the onion, potatoes, carrots, beet root, green chillies and keep it aside.
  • In a pan, add oil, mustard seeds and cumin and let it crackle.
  • Then add curry leaves and green chillies and saute for a minute.
  • Add the chopped onion and saute till it becomes golden brown colour.
  • Add all the cut vegetables and peas and saute for 2-3 minutes.
  • Add water, cover the pan and let it cook.
  • When the vegetables are cooked, add the garam masala and coconut milk and stir it well.
  • Do not let the mixture boil after adding the coconut milk.
  • Serve it hot with rotis or rice.
