Ingredients

  • 1 cup - cauliflower florets
  • 1 cup - French beans, finely chopped
  • 1 cup - chopped carrot
  • 1/2 cup - green peas, shelled
  • 3 - green chillies, chopped
  • 2 - onions, chopped
  • 1 tbsp - chopped garlic
  • 1/4 tsp - mustard seeds
  • 8 - curry leaves
  • 1/2 cup - grated coconut (optional)
  • 1 tbsp - oil
  • Salt to taste

How to Make Mixed Vegetable Foogath

  • Parboil the cauliflower, beans, carrots and peas in a little water for about 5 or 6 minutes.
  • Drain and keep aside.
  • Heat oil in a pan and add the mustard, garlic and curry leaves.
  • When the mustard starts spluttering add the chopped onion and green chillies and fry till the onions turn slightly brown.
  • Add the parboiled vegetables and salt and mix well.
  • Mix in the grated coconut.
  • Cover and cook for about 2 more minutes then turn off the heat.
