Ingredients

  • 2 cups - mixed vegetables like peas, carrots, potato, cauliflower (chopped)
  • 2 - onions (chopped)
  • 2 tsp - chilli powder
  • 1/2 tsp - turmeric powder
  • 2 tsp - ginger-garlic paste
  • 1 tsp - cumin powder
  • 2 - tomatoes (chopped)
  • 2 pieces - cinnamon
  • 2 tbsp - vinegar
  • 1 tsp - sugar
  • Salt to taste
  • 3 tbsp - oil

How to Make Mixed Vegetable Vindaloo

  • Heat oil in a pan and saute the onions till golden brown.
  • Add ginger-garlic paste, tomatoes, cinnamon and fry for some time.
  • Add chilli powder, cumin powder, turmeric powder and sugar, fry till the oil separates from the mixture.
  • Add the chopped vegetables, vinegar and a little water and bring to boil.
  • Reduce heat and simmer till the vegetables are cooked and the gravy is sufficiently thick.
