Ingredients

  • 2 cups - mushroom, cut into pieces
  • 2 - onion chopped, medium sizes
  • 1 - tomato chopped
  • 2 - garlic cloves, crushed
  • Ginger - small piece crushed
  • 2 - green chillies
  • 1/2 tsp - turmeric powder
  • 1 tsp - chilli powder
  • 1/4 tsp -garam masala
  • 2 - eggs
  • Curry leaves - A few
  • 2 tbsp - coconut oil
  • Salt to taste

How to Make Mushroom Fry

  • Heat oil in a pan. Add 1/2 tsp mustard seeds and let them splutter.
  • Then add onions and saute till golden.
  • Fry garlic and ginger for two mins.
  • Add tomato, green chillies, turmeric powder, chilli powder, salt and curry leaves. Stir well.
  • Add mushroom, stir and cook by adding a little water.
  • Cook until no water remains.
  • Break two eggs.
  • Add to this mixture, stir well and let it dry.
  • Add garam masala. Garnish with coriander leaves.
