Ingredients

  • 3 cups - cooked rice
  • 2 cups - sliced fresh mushrooms
  • 1/2 cup - snipped parsley
  • 1/2 cup - chopped onion
  • 1 can - evaporated milk
  • 2 tbsp - s - butter or margarine
  • 85 g - package cream cheese, softened
  • 2 - eggs
  • 1 tsp - salt

How to Make Mushroom Rice Bake

  • In a skillet, cook mushrooms and onion in butter or margarine till onion is tender but not brown.
  • Beat together eggs and cream cheese till smooth. Stir in milk.
  • Stir in cooked rice, parsley, salt and cooked mushroom mixture.
  • Turn mixture into a 10 x 6 x 2 inch baking dish.
  • Bake, uncovered, in a 350 C oven for 40-45 mins, or till a knife inserted off-centre comes out clean.
  • Let stand 10 mins before serving.
