Ingredients

  • Brinjal - 250 gm
  • Tomato - 100 gm
  • Tamarind - lemon size
  • Onion - 3
  • Green chillies - 3
  • Ginger-garlic paste - 1 tsp
  • For Roasting:
  • Groundnuts - 1 tbsp
  • Sesame - 1 tsp
  • Poppy seeds - 1 tbsp
  • Coriander seeds - 1 tsp
  • Fenugreek seeds - 1/2 tsp
  • Garam masala - 1/2 tsp
  • Cumin - 1/2 tsp

How to Make Must Eat Bagare Baingan

  • Roast the ingredients for the masala separately and mix together.
  • Grind to a fine paste with a lemon size tamarind ball.
  • Put oil in a kadai and fry finely chopped onion.
  • Add ginger garlic paste and stir.
  • Add the ground masalas and fry.
  • Add the finely chopped tomatoes, slit green chillies and fry.
  • Add salt accordingly.
  • Slit the brinjal and fry in a little oil in a separate kadai and keep it aside.
  • Steam the brinjals with a little salt in the microwave.
  • Add the brinjals in the gravy and stir.
  • Cover and cook till the oil separates.
  • Serve.
