Ingredients

  • 2 cups - Basmati rice
  • 4 cups - coconut milk
  • 1 tbsp - urad dal
  • 3 tbsp - split yellow moong dal
  • 6 - dry red chillies
  • A few sprigs - curry leaves
  • 3 tbsp - salted peanuts (crushed lightly)
  • Oil as required
  • Salt to taste
  • 1/4 cup - grated coconut

How to Make Nariyawale Chawal - Coconut Rice

  • Wash and soak the rice for 15 minutes, drain and keep aside.
  • Heat oil in a pressure cooker, add urad dal and moong dal, and fry until they turn golden brown.
  • Add red chillies, curry leaves, crushed peanuts and fry again for a few minutes.
  • Add rice and saute for 2 minutes. Add coconut milk, salt and pressure cook up to 2 whistles.
  • Allow the steam to escape and separate the grain of rice lightly, with a fork.
  • Garnish with grated coconut.
