Ingredients

  • For salad:
  • 2 cups - cooked egg noodles
  • 1 cup - cooked chicken breast, diced
  • 1/2 cup - red capsicum, diced (discard seeds)
  • 1 - cucumber, diced (discard seeds)
  • 1/2 cup - salted peanuts
  • salt to taste
  • For dressing:
  • 2 tbsp - tomato sauce
  • 1 tbsp - lime juice
  • 1 tbsp - honey
  • 2 tbsp - oriental sesame sauce
  • 1 tsp - roasted chilli paste
  • 2 tsp - dark soya sauce
  • To garnish:
  • 1 tsp - chopped spring onion
  • 1 tsp - coriander leaves

How to Make Noodle Salad

  • Combine the ingredients for the salad.
  • Mix together the dressing ingredients.
  • Pour over the noodle mixture and toss.
  • Serve garnished with chopped spring onions and coriander leaves.
