  • Chicken legs - 500 g (cleaned)
  • onions - 4 (medium)
  • garlic - 2 bulbs (peeled and ground to paste)
  • ginger - 2 inch (paste form)
  • garam masala - 2 tsp
  • chilly (green) - 3
  • black pepper - 3 tsp (freshly powdered)
  • turmeric powder - 1 tsp
  • salt to taste
  • curry leaves

How to Make N'Robed Kerala Chicken Fry

  • Chop onions, garlic, ginger, chopped green chillies. Lightly fry in oil with mustard and curry leaves.
  • Add salt, garam masala and pepper powder.
  • Make a paste in a grinder.
  • Score the chicken legs and rub them with the paste. Marinate in the refrigerator for 30 mins.
  • Heat 3 tbsp oil in a flat kadai and fry chicken legs at simmer till light brown.
  • Garnish with onion rings and serve
