  • 1 ¼ cups all purpose flour
  • 1 ½ cups whole wheat flour
  • 1 tsp. baking powder
  • ½ cup rolled oats
  • ½ cup coconut oil, melted and cooled
  • 2 eggs, beaten
  • 1 cup milk
  • ½ cup light brown sugar
  • 2 bananas, chopped
  • 4 knobs of preserved ginger, diced
  • 2 tbsp. preserved ginger syrup

How to Make Oat, Banana and Ginger Muffins

  • Line a 12 cup muffin pan with paper muffin liners.
  • Sift the flours and baking powder into a large bowl, then stir in the oats.
  • In a separate bowl, beat together the oil, eggs, milk and sugar.
  • Then pour into the dry ingredients and mix together until just combined – do not overmix.
  • Gently stir in the bananas and preserved ginger, then spoon the batter into the paper liners.
  • Bake in a preheated oven, at 400 degrees F, for 20 minutes.
  • Remove the muffins from the pan, then pour the ginger syrup over them and let cool on a wire rack.
