Ingredients

  • 1/2 kg - Okra (chopped)
  • 1- Onion (chopped finely)
  • 2 - Green chillies (slit opened)
  • 1/2 tsp - Mustard seeds and urad dal
  • 5 - Curry leaves
  • Oil
  • Salt
  • For Oats and Quinoa Spice Powder:
  • 1/4 cup - Rolled oats
  • 1/4 cup - Quinoa
  • 3 - Dry red chillies
  • 1 tbsp - Urad dal
  • 2 tbsp - Channa dal
  • 2 tbsp - Coriander seeds
  • 1/4 tsp - Asafoetida powder
  • 2 pinch - Turmeric powder
  • Salt

How to Make Oats-Quinoa spiced Okra

  • Heat oil and sputter mustard seeds and urad dal.
  • Add chopped onions, curry leaves and slit opened green chillies with salt and saute until the onions turns translucent.
  • Add the chopped okra pieces and saute for few minutes.
  • Put the flame on medium and cook for a few minutes on simmer with the lid closed.
  • Finally add 3-4 tbsps of oats-quinoa spice powder to the cooking okra pieces and saute until the vegetables turn crispy.
  • For spice powder:
  • Dry roast the channa dal, urad dal and dry red chillies until they turn golden brown.
  • Now add the coriander seeds and dry roast for a few minutes.
  • Finally roast the quinoa and rolled oats for a few minutes along with asafoetida powder and turmeric powder.
  • Add salt to the roasted ingredients and grind as a coarse powder.
