Ingredients

  • 1 medium chicken, jointed
  • 1 ½ cups ground roasted groundnuts
  • 1 small onion
  • ¼ inch piece ginger
  • Handful of coriander leaves
  • 1 tsp. each of garam masala, ground cumin seeds and coriander seeds
  • Salt and chilli powder to taste
  • 1 cup curds, beaten
  • 4 hard boiled eggs, boiled, shelled and quartered
  • 2 cups hot boiled rice

How to Make Oil Free Chicken Rice

  • Grind onion, ginger, chillies and coriander leaves.
  • Mix into the spices, curds and tomatoes and groundnuts.
  • Put in a pan and cook over a medium fire until the chicken is tender and gravy thick.
  • Put the rice in the centre of a plate and arrange the chicken around it. Decorate with eggs.
