Ingredients

  • 1 medium chicken
  • ½ cup curds
  • A pinch of nutmeg
  • 1 tbsp. tomato ketchup
  • 1 tbsp. vinegar
  • A few drops orange food colour
  • 1 inch piece unripe papaya
  • 1 inch piece ginger
  • 5 flakes garlic
  • 1 tsp. cumin seeds
  • Salt and chilli powder to taste

How to Make Oil Free Tandoori Chicken

  • Grind papaya, ginger, garlic and cumin seeds to a paste.
  • Mix all the above ingredients together and set aside for a few hours.
  • Pierce the chicken on a long skewer and roast in a hot tandoor till uniformally cooked and golden.
  • You can bake it in an oven till it is tender and marinade is absorbed by the meat.
  • Or you can grill under the grill until brown and crusty.
  • Serve with sliced rings of onions and lime soaked in a tbsp. of salted vinegar.
