Ingredients

  • 5 large green mangoes
  • 10 bitter gourds
  • 15 green chillies
  • 6 limes slit, in fours
  • 100 gms - lotus roots
  • 50 gms - fenugreek seeds
  • 50 gms - nigella seeds
  • 50 gms - fennel seeds
  • 50 gms - turmeric powder
  • 20 gms - kashmiri chilli powder
  • 2 cups - mustard oil

How to Make Pachrangeachar

  • Cut the mangoes into small pieces and discard seeds.
  • Cut the bitter-gourds into thick discs. Slit the green chillies.
  • Clean and cut the lotus roots into 1/2 cm thick discs.
  • Heat the oil to smoking point and cool it.
  • Combine all the ingredients, add to the prepared vegetables and fill in jar.
  • Sun for a few days till ready.
