  • 1/2 kg - potatoes
  • 2 bunches - Amaranth leaves or spinach leaves
  • 3 tsp - oil
  • 1 tsp - channa dal
  • 1 tsp - turmeric powder
  • 2 tsp - chilli powder
  • Salt to taste
  • 1/2 tsp - cumin seeds
  • Curry leaves, a few

How to Make Palak Subzi

  • Pressure cook the potatoes with their skin, peel, mash and set aside.
  • Wash the spinach or amaranth leaves and chop fine.
  • Heat 3 tsps of oil, add the mustard seeds and the curry leaves.
  • When the mustard seeds splutter, add the cumin seeds, and channa dal and saute for a couple of minutes.
  • Add the chopped spinach and sprinkle water.
  • Cover on a low heat till the spinach is tender and dry.
  • Add to the mashed potatoes, turmeric powder, salt and chilli powder.
  • Mix well.
  • Cook for a minute, till everything blends well.
  • Garnish with chopped coriander leaves.
  • Serve hot with puri, phulkas and naans.
