  • 1 kg - fresh paneer (cottage cheese), crumbled
  • 2 tbsp - red curry paste
  • 2 eggs, lightly beaten
  • 12 spring onions, chopped
  • 250 gms - corn kernels, washed and drained
  • 1/2 cup - fresh breadcrumbs
  • 1/2 cup - chopped fresh coriander
  • 1/4 cup - chopped fresh mint
  • For the sauce (combine and mix well):
  • 1 cup - sweet chilli sauce
  • 1/2 red capsicum, finely chopped

How to Make Paneer corn patties

  • Combine and mix all ingredients for the patties in a bowl.
  • Divide the mixture equally into 30 balls. Shape into patties.
  • Place the patties on a baking tray and bake uncovered in a preheated oven for 25-30 mins. or until well browned.
  • In between baking time, turn the patties on their sides to make sure the patties are well browned on both sides.
  • Serve hot with sauce.
