Ingredients

  • 200 gm - paneer or tofu (use paneer made from skimmed milk)
  • 150 gm - capsicums
  • 150 gm - onions
  • 100 gm - carrots
  • 150 gm - tomatoes
  • 1 tbsp - oil
  • 2 - green chillies, chopped fine
  • 1 tsp - ginger, minced
  • 3 tbsp - mint leaves, minced
  • 3 tbsp - coriander leaves, minced
  • 2 - red chillies
  • 2 tsp - coriander seeds
  • 1 tsp - cumin seeds
  • 1/2 tsp - pepper
  • 1/2 tsp - salt

How to Make Paneer-Tofu and Vegetable Saute

  • Slice the paneer or tofu.
  • Cut capsicums into 3 cm pieces.
  • Cut onions into 6 parts and separate layers.
  • Slice carrots. Chop tomatoes.
  • Steam all the vegetables except tomatoes till tender crisp.
  • Powder red chillies with coriander, cumin and pepper.
  • Heat oil, fry minced ingredients.
  • Add powdered masala, fry 1 minute.
  • Add tomatoes, paneer and vegetables. Add salt.
  • Sprinkle 2 tbsp of water and simmer for 5 minutes.
  • Serve with rotis.
