Ingredients

  • 1/2 lb - pasta (any shape you prefer).
  • Salt - to taste.
  • 1 tbsp - oil.
  • 1 - onion, minced.
  • 1 clove - garlic, minced.
  • 1 - ginger.
  • 1/2 cup - grated coconut.
  • 3 - green chillies.
  • 1 small bunch - coriander.

How to Make Pasta with Coriander and Coconut Pesto

  • Cook the pasta as per the box instructions.
  • Grind the coconut, green chillies, ginger and coriander to a fine paste (try not to add too much water).
  • In the meantime, heat oil, add the onion and garlic, saute for 1/2 min.
  • Drain the pasta and add to the heated pan.
  • Add the ground mixture, salt and stir well.
  • Serve hot.
