How to Make Peach and Vanilla slices

  • Mix the flour, salt, sugar and yeast.
  • Add the melted butter, lightly beaten eggs and warm water and knead it to make a smooth dough.
  • Place the dough in a clean bowl, cover it with cling film and leave it in a warm place to rise for about 1 hour or until double in size.
  • When the dough has risen, punch the air back, roll it out into a rectangle to fit a 23 cm square cake tin.
  • Place the rolled out dough in the tin and cover it with a cling film.
  • Preheat the oven to 200 degree Celsius.
  • Now make the filling by mixing sugar and corn flour in a small bowl.
  • Put the mascarpone and curd cheese in a large bowl and beat in the sugar mixture.
  • Now add the eggs and vanilla extract.
  • Spread the apricot jam on top of the bread and pour the filling on top of the jam.
  • Now arrange the peach slices on top of the cheese mixture.
  • Bake in the preheated oven for 20 to 25 minutes or until the filling sets and is brown.
  • Let it cool slightly before cutting into slices.
