Ingredients

  • 100 gms. carrots, peeled
  • 100 gms. cucumber
  • 100 gms. French beans
  • 1 tsp. black peppercorns
  • 2 shallots
  • 2 garlic cloves
  • 25 gms. fresh root ginger
  • 2 tbsp. vegetable oil
  • 700 ml. vegetable stock
  • Salt to taste
  • Few stalks of fried shallots, to garnish

How to Make Peppery Vegetable Soup

  • Cut the carrots into 1 cm cubes.
  • Trim the beans and slice them into rounds of a size similar to the carrots.
  • Peel the cucumber and scoop the seeds out, then dice it into 1 cm cubes.
  • Grind the peppercorns, shallots, garlic and ginger to a paste.
  • Heat the oil and fry the paste for 3 minutes.
  • Add the water or stock and bring to the boil.
  • Add the vegetables, and simmer for 15 minutes, until tender.
  • Taste the soup and add salt as necessary.
  • Serve in individual bowls, garnished with fried shallots.
