  • Pineapple - 1 (or tinned pineapple slices).
  • Brown sugar - 2 to 3 tbsp.
  • Cinnamon powder - 1/2 tsp.
  • Rum or brandy - 1 tbsp| Mango Cream.
  • Fresh curd - 4 cups.
  • Fresh or tinned mango pulp - 2 cups.
  • Fresh cream - 1 cup.
  • Sugar to taste.
  • Orange liqueur - 2 tbsp.
  • Pistachio nuts to garnish.

How to Make Pineapple with Mango Cream

  • Peel and cut pineapple into slices.
  • Toss with cinnamon powder and refrigerate at least for one hour.
  • Line a deep strainer with a thin cloth. Place curd in it and let all the liquid drain till about 1 cup of thick curd cheese is left the cloth.
  • Beat the curd cheese till smooth and mix with mango pulp.
  • Add whipped cream, brown sugar, rum or brandy and orange liqueur.
  • Just before serving, place pineapple slices in individual pudding bowls and top with mango cream and garnish with chopped pistachio nuts.
