  • Basmati rice - 2 cups
  • water - 1 cup
  • milk - 3 cups
  • melted Ghee - 1/2 cup
  • cloves 6
  • cinnamon - 3 to 4 pieces
  • sugar - 2.5 cups
  • pineapple essence - 1/2 tsp
  • finely chopped pineapple pieces - 1 cup
  • yellow food colour few drops
  • raisins - 2 tbsp

How to Make Pineapple Zarda Pulao

  • Wash the rice and drain well. Add water and milk and let it soak for 15 minutes.
  • Heat the Ghee in a thick bottomed pan.( Preferably non-stick). Add cloves and cinnamon.
  • Fry for few seconds. Add the rice with the water and milk. Cover and simmer on a low flame.
  • While the rice is cooking, simmer pineapple pieces with one and a half cup of water for 5 minutes.
  • Add sugar and simmer for 10 minutes. Remove from fire, stir in the essence, colour and raisins.
  • When the rice is cooked, add the pineapple mixture.
  • Cook without covering till most of the syrup is absorbed the rice is almost dry.
  • Serve hot or cold as a dessert.
