  • 1 cup - parboiled rice
  • 1/4 cup - beaten rice
  • 1-2 cups - sour butter milk
  • 1/4 tsp - cooking soda
  • oil
  • salt

How to Make Plain Sponge Dosa

  • Soak washed rice and aval together in buttermilk overnight.
  • Grind to a smooth batter, a little thinner than the regular idly dosa batter.
  • Add salt and cooking soda and mix well.
  • Heat a tawa and pour a ladle full of batter and drizzle oil; don't spread the batter.
  • Cook covered over a medium flame for a minute.
  • Serve with a spicy chutney or sambhar.
