Ingredients

  • 250 g - medium brinjals
  • 1 - large onion (grated)
  • 2 tsp - ginger paste
  • 2 tbsp - garlic paste
  • Salt and chilli powder to taste
  • 2 tsp - coriander powder
  • 1 tsp - cumin powder
  • 1/2 tsp - turmeric powder
  • 1 tsp - garam masala
  • 3 - large tomatoes (grated)
  • 3 tbsp - cooking oil
  • For garnishing:
  • few green chillies and coriander leaves

How to Make Plain Stuffed Brinjal

  • Wash and wipe the brinjals.
  • Make long slits and stuff the masala in it.
  • Heat the ghee in the kadai and arrange the stuffed brinjals, side by side.
  • Cover and cook till one side is cooked.
  • Turn and cook the other side gently.
  • When almost cooked, add grated tomatoes and cook till they are soft.
  • Fold in chopped green coriander leaves and serve immediately.
