Ingredients

  • 2 cups - beaten rice flakes (Poha).
  • 1 cup - coconut (fresh) grated or scraped.
  • 1 - cucumber, chopped finely.
  • 3 - green chillies, finely chopped.
  • 1 inch piece - ginger, peeled and grated.
  • 1 tsp - cumin seeds.
  • 2 pinches - asafoetida.
  • 1 stalk - curry leaves.
  • 1/4 cup - fresh curd.
  • 1/2 - tsp sugar.
  • Salt to taste.
  • 1 tbsp - ghee.

How to Make Poha Satvika

  • Wash and soak beaten rice for 15 mins.
  • Heat ghee in a small pan. Add cumin and asafoetida. Allow to splutter.
  • Add green chillies, curry leaves and ginger.
  • Fry for a few seconds.
  • Pour seasoning over soaked rice.
  • Sprinkle salt, sugar, cucumber, coconut, mix well with hand.
  • Beat curds till smooth.
  • Put individual portion of poha in bowl.
  • Top with 1 tbsp of curd.
  • Serve immediately.
