Ingredients

  • 250 g - Ash gourd/Poosanikai
  • 1/4 cup - Toor dal
  • 1/4 cup - Channa dal
  • 1/2 tsp - Sambar powder
  • 1/4 tsp- Turmeric
  • 1 tsp - Coconut oil
  • 1/4 tsp - Mustard seeds
  • 1/4 tsp - Asafoetida
  • A few Curry Leaves
  • 2 tbsp - Coconut(Shredded)
  • Salt to taste
  • To Grind:
  • 1/2 tsp - Coriander seeds
  • 1/2 tsp - Channa dal
  • 3-4 - Red chillies
  • 2-3 tbsp - Coconut.

How to Make Poosanikai ( Ash Gourd) kootu

  • Cut the poosanikai into big cubes and keep aside.
  • Soak the toor dal and channa dal in water for 15 mins.
  • Now combine the dal, the sambar powder, turmeric powder, salt, water and the poosanikai in a pressure cooker.
  • Pressure cook till 2-3 whistles.
  • Now dry roast the ingredients for grinding and then grind them into a smooth paste with a little water.
  • Now dry roast the coconut in a pan.
  • Then, add the cooked poosanikai and dal mixture, ground masala and 1/2 cup of water in a pan and cook to reach the kootu consistency.
  • Boil for 2-3 minutes.
  • Add the roasted coconut.
  • Temper the mustard seeds and curry leaves in coconut oil and pour on the top.
  • Serve hot with any dry curry.
