Ingredients

  • 250 gm - french /green beans, chopped
  • 3 - potatoes, cubed or cut lengthwise
  • 2 - tomatoes, chopped
  • 4-5 - garlic cloves, chopped
  • 2 tsp - ginger, grated
  • 4 - green chillies, chopped
  • 1 pinch - asefetida
  • 1 tsp - cumin seeds
  • 1 tsp - coriander powder
  • 1 tsp - garam masala
  • 1/2 tsp - turmeric powder
  • 1/2 tsp - red chilly powder
  • salt o taste
  • vegetable oil for frying

How to Make Potato & Green Beans Stir Fry

  • Heat oil in a wok, fry the potato cubes till it becomes golden brown from both sides.
  • Drain on paper towel and set it aside.
  • Remove all the oil from wok remaining around 3 tbsp, add asafoetida and cumin seeds.
  • Saute for a minute.
  • Add ginger and garlic, stir for 2 minutes.
  • Add all spices and salt followed by chopped tomatoes and chillies.
  • Mix well and cook for 2 minutes.
  • Add chopped beans, stir and cook for 7-10 minutes on low heat, stirring frequently.
  • Do not add any water.
  • Add fried potatoes and mix well.
  • Cook for 2 more minutes.
  • Remove from heat and serve hot with chapatti.
