The blend of soft, yummy potatoes along with ginger, garlic, green chillies, mustard seeds, cumin seeds and savoury masalas makes it a tangy dish to relish upon. The jaggery-tamarind extract gives away the needed tartness to the dish. Serve hot with any type of main course.

  • 4 big potatoes
  • 2 cloves garlic
  • 1” piece ginger
  • 4 green chillies
  • 3 tbsp. grated coconut
  • ¼ bunch coriander leaves
  • ½ tsp. turmeric
  • ½ tsp. chilli powder
  • 1 ½ tsp. coriander powder
  • ½ tsp. garam masala
  • 2 tbsp. jaggery
  • ¼ cup thick tamarind extract
  • Salt to taste
  • 2 tbsp. oil
  • For tempering:
  • 1 tsp. mustard
  • 1 tsp. cumin
  • 2 sprigs curry leaves

How to Make Potato Saag

  • Wash, peel and quarter potatoes. Chop ginger, garlic and slit green chillies, and coriander.
  • Mix jaggery with tamarind extract and keep aside.
  • Heat oil add mustard seeds, when they crackle, add cumin seeds, curry leaves and sauté.
  • Add potatoes, ginger, garlic and chillies. Fry for a while. Add turmeric, chilli powder, coriander powder and coconut. Fry for some time till potatoes are almost done.
  • Mix in the jaggery tamarind extract, add salt and cook for a minute. Garnish with coriander leaves and serve.
