  • 2 cups grated pumpkin (remove the skin and seeds)
  • 2 cups - all - purpose flour
  • 1.25 cups - Sunflower oil
  • 2 full cups - Sugar
  • 1tsp - Baking soda
  • 1 tsp - Salt
  • 1 tsp - Cinnamon powder
  • 4 - Eggs
  • Few almonds or cashew (finely chopped)
  • 2 to 3 drops - Vanilla essence

How to Make Pumpkin Cake

  • Steam the grated pumpkin for about 5 minutes. Then let it cool.
  • Beat the eggs well and add sugar to it. Beat for another 3 minutes.
  • Sieve flour with the baking soda, cinnamon powder and salt.
  • Now slowly add the flour to the egg mixture and mix well.
  • Add the grated pumpkin and oil also. Mix everything well.
  • Add the almonds and vanilla essence.
  • In the meantime, preheat the oven to 250 degrees F.
  • Grease the baking tray with a little butter and dust it with a little flour.
  • Now add the mixture and bake for about 25 minutes or till done.
  • You can check it by piercing the centre of the cake with a knife. If it comes out clean, the cake is done.
